How do you keep Greek chicken kabobs from drying out?

Try not to overcook your kabobs to keep the chicken moist and full of flavour. It will dry out if you over cook them. Grill them for about 10-15 minutes, turning them once, until they’re cooked through. It should be 165F in the middle.

The best way to tell if chicken is cooked through is with a meat thermometer. I have this instant read meat thermometer and I love it. It helps me to get perfectly cooked meat every time, and keeps me from overcooking the meat and having it dry out.

Can chicken kabobs be made ahead of time?

You can definitely make these chicken kabobs ahead of time, but since the chicken is in a marinade with lemon juice, I wouldn’t recommend making them more than 4 hours ahead. With an acidic component in the marinade, the meat starts to break down after a certain point and then you end up with mushy chicken.

I have found that 4 hours is about the maximum amount of time you want to let chicken sit in a marinade with lemon juice in it. Any longer and you get mushy chicken. But if you want to prep these kabobs a couple of hours ahead and let them sit in the fridge until you grill them, that is totally okay.

How to make Greek Chicken Kabobs with Tzatziki Sauce:

  • The chicken can be tossed with the marinade and threaded onto skewers with the veggies 2-4 hours ahead of time if you like, or right before grilling.
  • Grill for 10-15 minutes, turning once, or until the chicken is cooked through. It should be 165F in the middle when it is fully cooked.
  • While the kebabs are grilling you can make the tzatziki sauce, or make it ahead of time if you like and keep it in the fridge. If you don’t want to make it, you can buy it already made at most grocery stores. We love the one at Costco.

Greek Chicken Kabobs with Tzatziki Sauce

An easy, 30 minute meal for the summer, these grilled Greek chicken kabobs with tzatziki sauce are fantastic. The whole family will love them!

Ingredients

For the chicken kabobs:

  • 2 tablespoons olive oil
  • 1 lemon, juice and zest
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon dried oregano
  • 2 cloves garlic, minced
  • 3 chicken breasts, cut into 1 inch cubes
  • 2 red peppers, cut into 1 inch pieces
  • 2 yellow peppers, cut into 1 inch pieces
  • 1 small red onion, cut into 1 inch pieces

For the tzatziki sauce:

  • 1 cup plain Greek yogurt
  • 3/4 cup chopped cucumber
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried dill

Instructions

  1. Preheat the BBQ to medium heat.
  2. In a medium bowl, whisk together the olive oil, lemon juice, lemon zest, salt, pepper, rosemary, oregano and garlic.
  3. Add the chicken cubes and toss until it is completely coated.
  4. Thread the chicken, peppers and onion chunks onto skewers, alternating as you go.
  5. Grill the kabobs for 10-15 minutes, turning once, or until the chicken is cooked through.
  6. Meanwhile, in a small bowl, stir together the yogurt, cucumber, garlic and dill for the tzatziki sauce.
  7. Refrigerate until ready to eat.

I absolutely ADORE Greek food - I could eat it pretty much every day of the week, so these kabobs with tzatziki are calling to me! I'm right there with you with the extra tzatziki - it goes on EVERYTHING!
