Happy Friday everyone!

To kick off the weekend I have a wonderful BBQ meal for you.  Tasty, easy, and quick to grill up, these lime coconut chicken kabobs are perfect for a summer dinner.

Plus, they pair perfectly with my lime coconut rice, and use up (most) of the leftover coconut milk from the can.

Evidently I’m on a bit of a lime kick lately.  These skewers, the rice, these pork chops…..I’m sorry?  I’ll try and branch out a bit next week I promise.  But lime is really just so good on all the things, especially when it comes to grilling.  It’s kind of hard to stop.  But I’ll try.

Variety is also good I suppose!

For today, though, lime coconut chicken kabobs.  We’ve made these several times over the last couple weeks, with a few changes each time.  This was our favourite variation.  If you want to make it super simple, we also quite enjoyed them making the marinade with just the coconut milk, olive oil, lime, garlic and salt and pepper, and eliminating all the other marinade ingredients.  The lime flavour shone a little more that way.  The chicken is much lighter in colour (see the next picture!) without all the spices though, and milder in taste.

Either way, we loved these lime coconut chicken kabobs, and will definitely be making them again.  Such a fast meal to make (ignoring the marinating time of course, but really, you’re not actually doing anything while it marinates so I don’t count that) and everyone loved it.

Plus, food on sticks is always fun.  Right?

Lime Coconut Chicken Kabobs

Lime Coconut Chicken Kabobs

*Note:* If you're missing ingredients, or just like a milder flavour to your chicken, these kabobs are also delicious making the marinade with just the coconut milk, olive oil, lime, garlic and salt and pepper. The amounts stay the same, just omit the other marinade ingredients.

Ingredients

  • 1/2 cup coconut milk
  • 3 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 2 tablespoons granulated sugar
  • 2 limes, juice and zest
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon cumin
  • 1 1/2 teaspoons coriander
  • 2 teaspoon curry powder
  • 3-4 boneless, skinless chicken breasts, cut into 1” cubes
  • 1 small pineapple, peel and core removed, and cut into 1” cubes

Instructions

  1. In a large bowl, whisk together the coconut milk, olive oil, soy sauce, sugar, lime juice and zest, garlic, salt, pepper, cumin, coriander and curry powder. Add the chicken cubes and stir to coat them all. Cover the bowl and place it in the refrigerator to marinate for 2-6 hours.
  2. Preheat the BBQ to medium high heat. Thread the chicken and pineapple pieces onto skewers (if using bamboo make sure to soak them in water for at least 30 minutes first), alternating the two.
  3. Lightly oil the grill and place the kabobs directly on it. Close the lid and cook for 5 minutes. Carefully turn the skewers over and cook for another 5 minutes on the other side, or until the chicken is cooked through. My grill was between 350-400F when I was cooking the skewers and they were cooked perfectly after 10 minutes.
  4. These were delicious with lime coconut rice and a salad.

Hello there! This recipe is so yummy, made it twice already since I found it. I'm curious to try adding some lemon grass to the marinade, it might go with the flavours nicely. Also next time I am making the lime coconut rice as well :) Thanks for sharing this, it will be a staple in my summer kitchen!
