I’m sneaking in one more “it’s still summer” treat before the season flies away and the school year is upon us!  And it’s a good one.  Roasted strawberry and oreo ice cream that is no churn, plus it’s lightened up a bit with some plain Greek yogurt!  This ice cream is good, and perfect for summer’s last hurrah.

We’ve been on vacation the last couple of weeks, out in BC visiting both my in-laws and my parents, which is why I’ve been a little MIA around here the last little bit.  I scheduled a few posts for you but pretty much managed to unplug for two weeks and really didn’t do a whole lot on the blog.  As any of my blogger friends know, it’s kind of hard to completely ignore the computer, and I’ll admit to doing a few things, but for the most part I unplugged.  It was a really nice break, although now I feel like I have a thousand things to do!

One thing I did do (and when I say I, I actually mean my much more tech savvy husband!) was get a new site design.  I’ve been meaning to for ages, but it’s one of those things that has been repeatedly pushed down the list.  Plus, I didn’t actually want to DO all the technical stuff, so it was much easier to accomplish when I had my husband available to help me (read: do it all for me).  I love the new look, so much prettier don’t you think?  Plus, the recipe list is much easier to navigate now – you no longer need to scroll through every single recipe in order to look at one category.  So let me know what you think, or if you find anything broken so I can fix it!

And now, back to the important stuff – ice cream!  This no churn ice cream is delicious.  Filled with roasted strawberries (you could totally skip that step, but it does make them a bit sweeter tasting and releases the juice which I liked in the ice cream) and chopped up oreo cookies – doesn’t get much better than that.  Except it does.  Because I also lightened it up a bit with some plain Greek yogurt.  The yogurt adds a bit of tanginess to the ice cream, and also makes it a bit harder.  You do need to let this sit for 5-10 minutes to make it scoopable, but I didn’t mind that, I like my ice cream nice and hard anyways.  If you want it to be softer, and more ice cream-y, simply replace the yogurt with more heavy cream.  It will be delicious either way.

School is almost here, which seems a little crazy.  The summer went far too fast, as always.  But I’m holding on to the last little bit of it, and enjoying some homemade ice cream with the kiddos before we head back into the craziness of the school year.  You should definitely join me!

Roasted Strawberry and Oreo Ice Cream (no churn)

Note: Using Greek yogurt to replace some of the cream in this no churn recipe lightened it up a bit, but it does freeze harder with the yogurt in it. If you want a softer ice cream, simply use 2 cups heavy cream and no yogurt in the mix. This also makes it slightly sweeter without the tanginess of the yogurt.

Ingredients

1 cup chopped fresh strawberries
1 teaspoon vanilla
1 can (14 oz, 415mL) sweetened condensed milk
1 cups heavy cream (whipping cream)
1 cup plain Greek yogurt
1 cup chopped oreo cookies (8-10 cookies)

Directions

  1. Preheat the oven to 425 degrees F. Line a rimmed baking sheet with parchment paper and spread the chopped strawberries on it. Roast the strawberries for 15-20 minutes. Let cool.
  2. Line a 9x5 inch loaf pan (or other freezer safe container of similar size) with parchment paper. In a small bowl, whisk together the sweetened condensed milk and the vanilla. In the bowl of a stand mixer, or with an electric mixer, whip the heavy cream with the plain Greek yogurt until stiff peaks form. Drizzle in the condensed milk mixture with the mixer running on low. Continue to whip until all the condensed milk is incorporated into the cream and the mixture is thick.
  3. Fold the roasted strawberries (including the juice they’ve released) and the chopped oreo cookies into the cream mixture, and spread this in the prepared pan. Cover and freeze for at least 6 hours. It does freeze quite solid, so let it sit at room temperature for 5-10 minutes before scooping.

      Unplugging is tough to do right? And I was still on the computer a bit, just a LOT less then usual, and I didn’t do much blog stuff at all. It was a nice break! We loved this ice cream, it didn’t last too long! :)

    Well this looks DELISH!! I still haven’t tried no churn ice cream, but I really need to!! I keep seeing it everywhere and it looks so easy. I love the roasted strawberries– I bet roasting them brings out so much flavor!!

    Good for you! It’s SO hard for me to unplug…I kind of miss those cell-phone-free days of my youth! And I’m still holding onto summer, even if deep down I’m secretly thinking about pumpkin/apple/everything 😉 Love this ice cream, those flavors sound amazing together!

      I agree with everything you just said! :) And it’s really hard to unplug, I really had to force myself not to just spend every evening on the computer once the kids were in bed, like I would at home. But, it was REALLY nice to read some books, haven’t done that in a while! Now if only I could catch up on everything I didn’t do for the last few weeks! Thanks Denise!
