Pesto Tortellini

Well you knew this was coming today.  Right?  I obviously had to show you the main way I’ve been using all that beautiful spinach pesto!  And pasta was the obvious choice.

This is barely even a recipe.  But, I have forced my family to eat some version of pesto pasta no less than 4 times in the last couple of weeks, and this is the best one.  So I’ve saved you trying to decide which veggies to toss in with your pesto and which kind of pasta to use….you know, cause that’s tricky stuff.   Sure…..

Anyways.

Pesto tortellini.  It’s pretty awesome, if I do say so myself.  And just look at all that green!!  Doesn’t it make you feel like it’s warm and sunny and spring like, even if you’re looking out the window at clouds and rain (and the possibility of more snow) like I am?  Something about spring.  All the vegetables suddenly look nicer at the grocery store and I want to eat them all.

I took the longer drive all the way to the city (it’s like 20 minutes, but you know, farther than the store 5 minutes away!) specifically to go to a store that sells just produce.  Their stuff generally looks much better then the regular grocery store and usually tastes great.  Plus they seem to have a lot more organic stuff for a decent price.  So I bought a ton of veggies.  Everything looked good.

And, spring!  So I wanted lots and lots of green stuff.  Is it just me?  Or does everyone do this in the spring?  Suddenly realize that you’re not getting enough veggies and crave them all?

At any rate, we’ve had lots of green pasta the last couple of weeks.  So you can trust me when I say that this pesto tortellini is amazing and you should definitely try it.  Especially if you’re like me and want all the green things now that spring is here.  Plus, it takes less than 30 minutes to make, and that includes all the washing and chopping of vegetables!

And if it does snow again this weekend (it’s supposed to, I’m really hoping it doesn’t!), then I’m going to have more pesto tortellini and just pretend it’s sunny outside to match.  Anyone with me?

 

Pesto Tortellini

 

Pesto Tortellini
 
Ingredients
  • 1 pound (450 g) tortellini (I used chicken and bacon tortellini, but any kind is fine)
  • 1½ cups pesto (homemade or store-bought)
  • 2 cups asparagus, cut into one inch pieces (20-25 thin spears)
  • 1 small zucchini, quartered and sliced (about 1½ cups)
  • 1 large stalk broccoli, cut into small pieces, florets and stalk (about 2½ cups)
  • 1 pint (275g) grape tomatoes, halved
  • ½ cup water
  • parmesan cheese, for serving
  • crumbled bacon bits, for serving
Directions
  1. In a large pot of boiling water, boil the tortellini according to the package directions, until tender. Drain, return to pot, and toss with the pesto sauce.
  2. In a large non-stick skillet, over medium heat, stir fry the asparagus, zucchini and broccoli until crisp tender, about 4-5 minutes. Add the tortellini with pesto sauce, and the water and stir to combine everything. Allow to heat through, then stir in the grape tomatoes and serve.
  3. Sprinkle with parmesan cheese and bacon and serve hot. Enjoy!

    This sounds great, Stacey, and believe it or not, we just bought several packages of Pasta (which we don’t generally do), including chicken & bacon tortellini!!!! I’ll pick up some fresh spinach today, and tomorrow’s dinner is basically done! thanks! Oh, and maybe you could post a couple of photos from BC for ‘Mir’, so she can see that it’s Spring/Summer here! (am I rubbing it in? – I don’t mean to … really!!!) xox

      Hahahaha, yes. You are rubbing it in. We actually somehow missed the snow, even though there was lots in nearby areas, so that’s kind of nice! And I have some flowers now so it’s all good. Spring is here, it’s just being as slow as usual to stay warm! I should be used to it by now! :) Hope you like the pesto!

    This is one beautiful bowl of tortellini, Stacey! I was definitely one of those kids that absolutely hated tortellini, and now that I’m older it’s one of my favorite ingredients to use! This looks so yummy! Pinned!

      Yeah, my kids don’t love it, but I’ve made it often enough now that they’ll eat it without too much complaining! :) I don’t really understand, I think it’s great! Thanks Justine, and thanks for pinning!

      Thanks Manali! It depends where you are in Canada, in Alberta it snows quite a bit, but this snow is just a bit and melts as it falls, just annoying after we had super nice weather here this week! It’s supposed to be warm again next week, we always get some of these cold days in April and sometimes May too, but it’s mostly nice! :)

    This pesto tortellini looks fantastic, Stacey! I love anything with pesto so this is perfect for me. And hopefully you’ll get some nice weather soon! It flurried the tiniest bit here the other day, but next week it’s supposed to be in the 70s again!

      Well, at least we’re not the only ones! It shouldn’t surprise me really, it happens every spring. It’s the nice weather that makes more snow and cold seem so awful! :) Oh well, it’s supposed to be nice here again next week too. Thanks!

      Hahaha, that made me laugh Mir! Yes, it gets warm in Canada! I’m in Alberta, our summers are actually quite nice and get pretty hot, but they’re short. And April and May are still spring where you can still possibly get some snow. It never stays, just annoying more than anything, especially since by April I really want to start planting my garden, but it’s a mistake to do it before the end of May since we still might get frost and kill everything! My trees are starting to flower and the tulips are about to bloom so it IS spring and this whole week was beautiful, the weekend is just going to be ugly evidently, always more annoying after you get the nice weather too! Oh well, May-Sept is generally lovely – can’t wait!
