Lime Coconut Rice

So rice isn’t my favourite thing in the world.  I know – I’m probably the only person on the planet to think that.  I don’t know, it’s just a little boring maybe?  What can I say, I guess I just prefer to get my carbs in the form of bread.

That being said though, I do enjoy rice when it’s different in some way or another.  Not just plain white rice.  I actually really love wild rice – but I don’t eat it all that often because the kiddos will eat regular rice, but not the wild stuff.  They’re getting older though, and more willing to eat whatever I put in front of them, so maybe it’s time wild rice made another appearance at out table.  Yep, that needs to happen soon.

As far as regular rice, with both me and the kids liking it though?  This lime coconut rice fit the bill.  It was plain enough that the kids all gobbled it up, yet different enough that I actually enjoyed it too.  That’s a win.

If you want to change up your rice side dish, give this lime coconut rice a try.  We really enjoyed it for a slightly different plain old rice!

Lime Coconut Rice - Quick and easy lime coconut rice that is the perfect side dish, and a great way to liven up your usual plain rice!


Lime Coconut Rice

Yield: serves 4

Note: I read that coconut rice is typically made with jasmine rice, not long grain white rice. But I tried it with both and we really preferred the flavour of the long grain white rice for this recipe. Feel free to change it up if you prefer a different type, just check the cooking time for whatever rice you choose.

1 tablespoon unsalted butter
1 cup long grain white rice
3/4 cup coconut milk
1 cup water
1/2 teaspoon salt
1/4 teaspoon pepper
1 lime, juice and zest


  1. In a large saucepan over medium heat, melt the butter, then add the rice and cook, stirring, for 1-2 minutes. Add the coconut milk, water, salt, pepper, lime juice and zest and bring to a boil. Reduce the heat to low, cover and cook for 15 minutes. Remove the pan from the heat and let stand for 5-10 minutes. Fluff the rice with a fork and enjoy!

    lol u are not alone! I don’t like rice either and I come from a country where no meal is complete without it! I like it when there are things added to it like in this coconut rice, sounds yum!

    My husband is OBSESSED with rice, Stacey! I love to throw in lime juice, coarse sea salt, red onion and cilantro. This version is amazing, too! It’s perfect with veggies and cheese, or a protein. Mmm.

      Ooh, red onion and sea salt would be awesome. Definitely doing that next time. And after throwing some cilantro on my serving (no one else here really likes it cause they’re all insane!) I don’t know that I’m ever gonna want rice without it again! Thanks Mir!

    Haha, I think my husband would die if he heard someone did not like rice. I completely understand though, everyone has their kicks. This sounds really good! I made a chicken sauce that was similar in flavours, so I know this will taste great!
