So rice isn’t my favourite thing in the world. I know – I’m probably the only person on the planet to think that. I don’t know, it’s just a little boring maybe? What can I say, I guess I just prefer to get my carbs in the form of bread.
That being said though, I do enjoy rice when it’s different in some way or another. Not just plain white rice. I actually really love wild rice – but I don’t eat it all that often because the kiddos will eat regular rice, but not the wild stuff. They’re getting older though, and more willing to eat whatever I put in front of them, so maybe it’s time wild rice made another appearance at out table. Yep, that needs to happen soon.
As far as regular rice, with both me and the kids liking it though? This lime coconut rice fit the bill. It was plain enough that the kids all gobbled it up, yet different enough that I actually enjoyed it too. That’s a win.
If you want to change up your rice side dish, give this lime coconut rice a try. We really enjoyed it for a slightly different plain old rice!

- 1 tablespoon unsalted butter
- 1 cup long grain white rice
- ¾ cup coconut milk
- 1 cup water
- ½ teaspoon salt
- ¼ teaspoon pepper
- 1 lime, juice and zest
- In a large saucepan over medium heat, melt the butter, then add the rice and cook, stirring, for 1-2 minutes. Add the coconut milk, water, salt, pepper, lime juice and zest and bring to a boil. Reduce the heat to low, cover and cook for 15 minutes. Remove the pan from the heat and let stand for 5-10 minutes. Fluff the rice with a fork and enjoy!
