Grilled Cilantro Corn

Corn on the cob is so good in the summer.  Every year when we have that first really sweet and juicy cob of corn, I’m surprised at just how good it is.  Generally I just make the usual boiled corn slathered with butter and salt.  But every once in a while, I need to mess with the classics.  It’s a problem really.

I will admit that my husband didn’t really care for this grilled corn.  He still ate it of course, but said that he definitely prefers plain boiled corn on the cob.  But me?  I loved it.  Of course, I love cilantro anything.  All you cilantro haters out there would most assuredly agree with him, but this grilled corn on the cob was such a nice change.  I still love the classic of course, and will be making that most often, but every once in a while I’m going to have to change it up and make this delicious grilled alternative and amazing compound butter again.

Grilled Cilantro Corn

Yield: Serves 4

Ingredients

4 ears of corn, husked
1/4 cup softened unsalted butter
2 tablespoons cilantro, minced
1 green onion, minced
1/2 teaspoon kosher salt
1/4 teaspoon fresh ground black pepper

Directions

  1. Preheat the grill to medium high heat. Mix together the butter, cilantro, green onion, salt and pepper. Spread 1 tablespoon of the compound butter on each ear of corn. Wrap each cob tightly in tin foil.
  2. Grill for 30-40 minutes, turning often, until the corn is tender.
